The Spanish word enchilar, meaning "to add chili," is the base of the word enchilada. While a dish similar to enchiladas was mentioned in the 1500s by Bernal Diaz del Castillo, a Spanish conquistador, meals similar to this were likely part of Mayan culture far longer - fish wrapped in corn tortillas, among other varieties. This famous dish has evolved to include mole and enchiladas rojas or verdes.
